HUCKLEBERRY MUFFINS

Ingredients

  1. 1 CUP QUICK OATS
  2. 1 CUP SOUR MILK
  3. 1 CUP FLOUR
  4. 1 TSP. BAKING POWDER
  5. ½ TSP. BAKING SODA
  6. 1 TSP SALT
  7. ¾ CUP BROWN SUGAR
  8. 1 EGG, BEATEN
  9. ¼ CUP MELTED BUTTER
  10. 1 CUP HUCKLEBERRIES (RASPBERRY, STRAWBERRY, AND THIMBLEBERRY MAY BE SUBSTITUTED.)

Directions
PREHEAT OVEN TO 400 DEGREES. COMBINE OATS AND SOUR MILD AND LET STAND. COMBINE ALL DRY INGREDIENTS. ADD EGG AND MELTED BUTTER TO OATS; MIX WELL. ADD DRY INGREDIENTS AND STIR ONLY UNTIL MOISTENED. FOLD IN HUCKLEBERRIES. FILL MUFFIN CUPS ¾ FULL. BAKE FOR 15-20 MINUTES.
